It is precisely this gap between dinner and dancefloor that The Parrot hopes to fill, especially on Donghu Lu, with people flocking to gastrobars like Liquid Laundry and Tepito before moving on to nightclubs like Le Baron and the newly opened Elevator. “In this area we’re finding that it’s not actually happening until later,” Holmberg says. “So we see ourselves more like a pre-party place, where you can come and enjoy a dance and have a good time before you go to Le Baron.” But with its gregarious character and light-hearted drinks, The Parrot might yet squawk loudest of all.
